Oven Made Pineapple Jerk Chicken


Prep- time 35 minutes

Cook time 1 hour 15 minutes


    • 1 (6lbs.) Roaster cut up 
    • 1/2 stick of butter  ( melted )
    • 2 tbsp. olive oil
    • 1 tbsp. brown sugar
    • 1 tbsp, ground all spice
    • 1 tbsp. seasoning salt
    • 1 tbsp . black pepper
    • 1 tbsp.paprika (preferred smoke)
    • 1 tbsp. cayenne pepper
    • 1/2 tsp cinnamon
    • 1/2 tsp nutmeg
    • 1 tbsp cornstarch
    • 1 tbsp. Worcestershire sauce 
    • 2 tbsp. low sodium soy sauce
    • 1 tbsp. hot sauce 
    • 4 sprigs fresh thyme ( chopped)
    • 3 garlic cloves minced
    • 1 (20oz)can of dole pineapple chunks in 100% juice


In a bowl combine all the seasonings dry and liquid and fresh vegetables and mix together real well,  not including cornstarch butter and olive oil included.

Wash chicken with water and white vinegar. remove excess hanging fat, leaving skin on. Pat dry chicken with paper towel.  and season chicken with rub being sure to rub well into chicken. Cover and refrigerate at least 2 hours, overnight if possible.

Preheat oven to 450, put chicken in the oven bake uncovered for 45 minutes. While baking open can of pineapple and pour in a bowl including the juice, add cornstarch and using a fork mix well so that the cornstarch is mixed into the juices. After chicken is cooked for 1 hour, remove about 1 cup of the juices on the chicken, then pour pineapples and juice over chicken, bake an additional 30 minutes, after 15 minutes, remove from oven and flip the chicken pieces, then cook for another 15 minutes, this gives both sides of the chicken a nice golden brown color .

Serve with rice cooked with pigeon peas and steam cabbage
