One Pot Dish

My grandmother always told me that any good cook,can use whatever she finds in the kitchen and turn it into a great meal. Well on this day I needed to go food shopping , but I was unable to , that did not stop the children from wanting dinner.r I have made paella in different ways before, but this is a first. I am just happy that as I was doing it I wrote down the recipe. This one pot meal, is so quick ,easy and simple yet so delicious.

Cook time 40 minutes

Serve 6 

INGREDIENTS

  • 6 chicken wings ( separated)
  • 3 tsp. creole seasoning
  • 3 tsp. old bay seasoning
  • 2 tbsp. Zatarians crab n shrimp oil
  • 3 tsp. Sazon all-purpose seasoning
  • salt n pepper to taste 
  • 3 tsps. garlic powder
  • 3 tsp. paprika
  • 3 tsp. cayenne pepper
  • 2 roma tomatoes chopped
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 2 sprigs fresh thyme
  • 1 can pigeon peas ( drained)
  • 3tbsp. olive oil
  • 1/4 stick of butter
  • 2 cups chicken broth
  • 1/2 cup seafood broth
  • 1 tbsp.lemon juice
  • 1lb. uncooked shrimp ( peeled and deveined)
  • 1 lb. imitation crab meat ( cut in prefered size pieces
  • 3 cups uncooked jasmine rice ( washed )

DIRECTIONS 

Wash chicken wings in lemon juice or white vinegar, dry wings off with a clean paper towel, season chicken wings with salt n pepper, 1 tsp sazon all purpose seasoning,  1 tsp. cayenne pepper 1 tsp. creole seasoning, 1 tsp. old bay 1 tsp. paprika and 1 tsp garlic powder.In a separate bowl add 1 tsp of each of the seasonings including 1 tbsp. crab n fish oil. Repeat in a separate bowl with crab meat. Set both aside in the fridge until you are ready for them. In a pan with a lid, add olive oil, heat on medium heat, brown chicken wings on each side,about 2 minutes each, when done set aside on a plate. in the same pan, add butter, let melt, then add minced garlic, and chopped onions, saute till translucent about 2 -3 minutes,then add chopped tomatoes, stir and combine for about 2 minutes. Add both broth ,fresh thyme and pigeon peas  and bring to a boil, once boiling add rice ,place chicken wings on top around the pot, cover and cook for 20 minutes, then add shrimp , cover and cook another 5 minutes, then add crab meat, turn of the heat and use a fork to stir all the ingredients together.
