Simple and Delicious Dinner

I whipped this simple pasta dish , when I knew my husband was on his way home from work and it would be late so I wanted something filling but on the healthy side. I also wanted to have enough for him to take the work the next day for lunch . I even had enough for me to have for lunch the following day as well.

Cook time 15 minutes


  • 2 boneless skinless chicken breast ( cut into bite size pieces)
  • salt and pepper to taste
  • 1 tsp. red pepper flakes
  • 1 tbsp. dried oregano
  • 2 tbsp. olive oil
  • 1 garlic clove minced
  • 1 medium onion sliced
  • 1 pack penne uncooked pasta ( I used whole wheat)
  • 2 cups of broccoli florets.


Cook pasta using direction on box rinse in cold water to prevent pasta from cooking.In the meantime, cut chicken breast into bite size pieces, season with salt n pepper. In a sauce pan with lid, heat olive oil on medium heat, add chicken and cook for about 5 minutes, stirring continuously after 5 minutes add garlic and onions ,continue to stir for another 2 minutes, until onions are translucent, add crushed tomatoes, oregano, combine ingredients together let simmer for about 3 minutes, add the aldente cook pasta stir and combine everything together then add brocolli, turn the heat off and combine the brocolli with everything the heat should cook the brocolli to a crisp texture
