Sunday’s Dinner

Sunday’s Dinner

I love Sunday Dinners at my house. My husband and me usually ask each of the kids what they would like for Sunday dinner and yes usually all of them do not agree, so I take turn cooking what they want . We do this because on Sunday’s I usually go all out with making dinner, but now that the girls are older and thankfully enjoy spending time in the kitchen with me, I get some help.Just like I did with this Sunday Dinner, only this Sunday dinner recipe was all mine , but they loved it.  This was suppose to be a simple bake chicken, but I had to make it more than just a simple bake chicken recipe. And that was exactly what I did .I did that with the rub I made for the chicken, WOW it was so good.

  • 1/2 stick of butter ( softened) Place in a bowl and add to the soften butter
  • 1 tsp salt
  • 2 tsp black pepper
  • 1 tsp. seasoning salt (I use Lawry’s)
  • 2 tsp. garlic powder ( I use roasted garlic powder)
  • 1/4 tsp cinnamon powder
  • 1/4 tsp. grated nutmeg
  • 2 tsp. allspice
  • 2tsp. dry thyme
  • 2 tbsp. minced garlic

Using a small spoon, combine all the ingredients into the softened butter, and mix real well

Wash chicken in white vinegar or lemon juice, pat dry with paper towel. Place chicken in baking dish

Using a spatula, rub the rub on the chicken real well, getting some under any skin you can. Cover and refrigerate for at least 1 hour.

Preheat oven to 400

Bake for 1 hour uncovered

I made rice n kidney beans, baked sweet potatoes with brown sugar, honey and walnuts. Saute green beans

Hello, I am a wife and mother who just love cooking for my family and friends. Cooking is a great passion of mine. I am Jamaican and love to cook Jamaican dishes, but my children do not always agree with what they like, so I have had to change recipes around for there liking .
