Creamy Lemon Chicken

Simple weeknight dinner.

Creamy Lemon Chicken


  • 4 boneless skinless chicken breast ( cut into 4 strips each)
  • salt and pepper to taste
  • 1 tbsp. garlic powder ( I used roasted garlic powder)
  • 1 tsp. red pepper flakes
  • 1 101/2 oz can cream of chicken soup
  • 1/2 cup low sodium chicken broth
  • juice of 1/2 lemon
  • 1/2 tbsp minced garlic
  • 1 lemon thinly sliced
  • 3 tbsp olive oil
  • 1 small onion sliced
  • 2 sprigs fresh thyme
  • 1/2 stick of butter


Wash chicken with water vinegar or lemon juice. Dry chicken pieces with paper towel. Season with salt pepper and garlic powder. Using a sauce pan with a lid.  Heat olive oil on medium high heat, brown chicken pieces on each side, About 2-3 minutes when done set chicken pieces aside on a plate. add butter to pan, when butter melts, add minced garlic and onions saute until soft about 3 minutes. Add chicken broth, cream of chicken soup, thyme, lemon juice, red pepper flakes, stir continuously for about 2 minutes, cover and bring to a boil. Add chicken pieces,  layer with lemon slices.cover for another 2 minutes.

Serve with Linguine pasta
