On this day, I knew I had to make dinner like always, well not really, because luckily my children will do the cooking for me. However I was feeling the urge for something and that something had to be something cooked, but i could not put my finger on what that something should be. I also wanted it to be something that did not take a lot of time but was delicious as if it did. I began to rummage through my fridge , pantry and cupboards, when I found the shrimp and crab meat, my excitement began, but then I came across a small pack of chicken wings and I am always in the mood for chicken wings.I looked in my cupboard and I found a can of green pigeon peas.
- 8 chicken wings ( separated)
- 1lb. uncooked shrimp
- 1lb. frozen crab meat( chopped into desired pieces)
- 1 can of green pigeon peas( drained and washed)
- 1/2 stick of butter
- 6 tbsp canola oil
- 1 tbsp. minced garlic
- 2 tbsp Zatarians crab n shrimp oil
- 3 tsp. all purpose sazon seasoning
- 3 tsp old bay seasoning
- 3 tsp garlic powder
- 2 tsp salt
- 3 tsp black pepper
- 2 tsp red crush pepper
- 1 medium onion (chopped)
- 2 roma tomatoes ( chopped)
- 2 cups chicken broth
- 2sprigs of fresh thyme
- 1/2 cup seafood broth
- 3 cups uncooked rice ( washed)
Directions,Wash chicken wing pieces in water with white vinegar or lemon juice. Dry with paper towel .Season with 2 tsp sazon all-purpose seasoning, 1 tsp black pepper, 1 tsp garlic powder, 1 tsp old bay seasoning 1/2 tsp salt, 1 tsp red crush pepper, rub seasoning in to wings. Wash shrimp with lemon juice and water, drained really well, season with 1 tsp black pepper, 1 tsp red crush pepper, 1 tsp garlic powder, 1/2 tsp. salt, 1tsp. old bay seasoning, 1 tbsp crab n shrimp oil using a fork mix well, cover and refrigerate. Repeat exactly with crab meat.
In a large sauce pan on medium heat, add oil, and brown chicken pieces on each side, till you get a nice golden color, about 3 minutes on each side.When finished set aside on a plate, in the same pan add the butter let it melts, then add chopped onions and minced garlic, saute for about 3 minutes, until onions are translucent the smell of the garlic is intoxicating almost ( lol). Add chopped tomatoes , combine and saute for 2 1 tbsp. all purpose seasoning , remaining 1/2 tsp salt. Add can of pigeon peas, and fresh thyme,cover and bring to a boil. Add rice, layer chicken wings on top of rice cook for 20 minutes, then add shrimp cover and cook for another 5 minutes, then add crab meat cover for another 3 minutes. Then use a fork and mix everything together.
