Fried Rice/Grill Shrimp

This simple dinner is absolutely delightful and delicious.The night before making this dinner, I knew I wanted shrimp, and since the children love shrimp as much as I do. I knew I could not go wrong.I . I have a late night thing and that is watching old reruns of Diners Drive ins and Dives. And saw this fried rice recipe. I believe they called it Hawaiian fried rice. I did not have an opportunity to write down the ingredients, but it stuck in my head as best as it could and so I made it how I remembered it and I am just happy I took the time to write it down as I went along. i may not have remembered it fully however what I came up with just magnificent.


  • 1 cup of smoked ham chopped
  • 1/2 of smoked sausage cut into 1 inch slices (I used polka kebsa)
  • 2 eggs (scrambled)
  • 1 medium onion diced
  • 1 1/2 cup frozen mixed vegetables ( thawed)
  • 2 garlic cloves minced
  • 1/2 cup chopped red, yellow and orange bell pepper . ( can use what you have)
  • 3 cups cooked white rice (at least 24 hours ahead)
  • 4 tbsp. olive oil ( divided 2n2)
  • 1/4 stick of butter
  • 1 tbsp. low sodium soy sauce
  • 2 green onions diced


  • 1lb uncooked shrimp ( peeled and deveined)
  • salt n pepper to taste
  • 1 tsp. old bay seasoning
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder


  • 1 cup fish broth
  • 1/4 stick of butter
  • 1 tsp red pepper flakes
  • 1 tbsp corn starch
  • 2 tbsp brown sugar
  • 1/4 stick of butter
  • 2 tbsp low sodium soy sauce


In pan skillet with lid, heat 2 tbsp olive oil, whisk and scramble eggs,set aside on a plate until it is time to use. Add the remaining 2 tbsp olive oil, brown sausage pieces on each side, set aside on a plate then add chopped ham and brown as well. Remove and add butter, let butter melts, then add minced garlic and chopped onions  and saute about 2 minutes. Add the mixed vegetables and chopped thyme  stir well, cover and let steam about 2 minutes, add the brown sausage and ham stir and combine real well for about 2 minutes, add the cooked rice , stir and combine, cover and let rice heat through,another 2 minutes add cooked eggs and soy sauce, stir and combine real well. Turn heat off.

Shrimp, season shrimp , using kabob sticks or not, (I used the kabob sticks because it made it more fun for the children. Heat indoor grill to 400, spray with cooking spray and grill shrimp on each side.

Sauce( Optional )

Heat butter in a small sauce pan on medium heat, when butter melts, add brown sugar, stir until sugar is dissolved about 3 minutes, add corn starch and stir continuously about 3 minutes until cornstarch is dissolved, then add fish stock, soy sauce  and red pepper flakes cover and simmer about 3 minutes. Serve over shrimp . Sprinkle green onions over plate.
