If you are looking for a quick, simple healthy yet tasty side dish then here is one for you.
- 1 medium sweet potato ( peeled and cut into strips, almost if not the size of a thick french fry )
- 1 zucchini wash and cut same way
- a handful of baby carrots,
- 1 medium onion sliced
- salt n pepper to taste
- 1 tbsp. olive oil
Preheat oven to 350
Lay ingredients on a flat baking sheet, drizzle olive oil, salt and pepper, then using your hands, massage into the vegetables. Bake uncovered for 30 minutes.
Note: You can see some grill bell peppers on the top. I was grilling chicken breast to go with this and decided to grill a few slices of bell peppers. You can simply add the bell peppers to the pan and bake with other ingredients.
