Coconut Curry Chicken and Linguini

COCONUT CURRY CHICKEN LINGUINI

INGREDIENTS

  • 11/2-2lbs of boneless skinless chicken thighs
  • 1 medium onion( half sliced and half diced
  • 3 cloves of garlic ( minced)
  • 2 tbsp curry powder
  • 1 tbsp turmeric powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp all purpose seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 sprigs fresh thyme
  • 1 cup of water
  • 1 cup coconut milk
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp all purpose flour
  • Juice of ½ lemon
  • 1 box linguini pasta ( uncook)
  • ½ of green, yellow and orange bell pepper( cut in slices)

DIRECTIONS

Wash chicken in water with distilled white vinegar or lemon juice, trim excess fat and cut into bit size pieces. Season with all of the dry seasonings. Cover and refrigerate at least 2 hours/

Note: this is a great dish to add to your meal prep routine.

When ready to cook. In a large stock pot, using directions on box, linguini pasta, lesson cooking time about 3 minutes. In a sauce pan with a lid, heat olive oil and butter on medium heat, when butter is melted add chopped onions and minced garlic sauté until onions are soft. Add season chicken and stir combining with sauté onions and garlic. Cover and cook slowly for 20 minutes, being sure to stir at least every  5 minutes to prevent sticking as curry will do that. This will cause the chicken to cook in its own juices which makes it even better. Then add flour ( I tend to sprinkle it all over than pan,) then  stir flour into the chicken real well. Cover and cook another 3 minutes allowing the flour to real cook into the meat and the sauce that is there. Add 1 cup of water stir and cook for 5 minutes, add fresh vegetables, onions, bell peppers and thyme, add coconut milk, stir combining everything. Cover and cook another 10 minutes, then add cook and drained linguini pasta, using a tongue combined the pasta with the chicken and vegetables, sprinkle lemon juice and continue to combine.
