Jerk Chicken Pasta

JERK CHICKEN PASTA

I CALL THIS ONE JAMAICAN MEETS ITALIAN

Prep Time :15 minutes

Cook Time 30 minutes

INGREDIENTS

  • 3 medium size boneless skinless chicken breast
  • 1 box penne pasta
  • 1 can fire roasted tomatoes ( diced)
  • 1/3 cup jerk marinade ( I will include a link to make homemade marinade)
  • 1 medium onion (diced)
  • 3 cloves of garlic ( minced )
  • ½ of a pack of polka kebsa sausage ( sliced)
  • ½ of a small red, orange and yellow bell pepper sliced thinly( you can use any colors you have)
  • 3 bunches of fresh thyme
  • 1-2 sprigs of fresh rosemary
  • 2 tbsp olive oil
  • Salt n pepper to taste
  • 1 tbsp all purpose seasoning
  • 1 tbsp all spice

 

DIRECTIONS

Wash chicken breast in water and distilled vinegar or lemon juice. In a bowl add jerk marinade, with all the dry ingredients, combine and mix well. Season chicken with marinade, cover and refrigerate at least 2 hours. ( This was included in my meal prep, so it was marinating for 3 days before I made it. Heat indoor grill on 400, spray with cooking spray and grill each piece of chicken, about 8 minutes for each

pieces. In the mean time, in a large stock pot,  cook penne pasta using instructions on box. When chicken is done, slice or cut into desired pieces. In a sauce pan with lid, heat olive oil and brown sausage pieces on each side. Remove brown sausage pieces, add minced garlic and diced onions , sauté till onions are softened, add bell peppers and stir for about 2 minutes then add sausage back in, stir and combine all the ingredients, then add can of fire roasted tomatoes,  thyme and rosemary stir and combine real well, Add 1 cup of water from cook pasta. Bring to a boil, add cook pasta, stir and combine real well.
