Jerk Pork Loin

DRY INGREDIENTS FOR MARINADE

• 2 tbsp allspice

• 2 tbsp black pepper

• 2 tsp cayenne pepper

• 1 tbsp sazon all purpose seasoning

• 2 tsp paprika

• 2 tsp garlic powder

• 2 tsp onion powder

Oven made Jerk Pork Loin

Ingredients

5lbs pork loin

Marinade for Pork

• 2 green onions

• 1/2smallonion

• 3 garlic cloves

• 4 sprigs of fresh thyme (1 ½ tbsp) dry thyme

• 1 tbsp brown guar

• 2 tsp low sodium soy sauce

• 2 tbsp whole pimentos

ADDITIONAL INGREDIENTS

• Small sauce pan for gravy

• 3 tbsp butter (or coconut oil, I did use coconut oil)

• 3 tbsp all purpose flour

• ½ tsp cayenne pepper, ( optional since you already added cayenne to marinade)

• 1 cup water

• Juice from cook pork about 2 cups

In a magic bullet or blender, blend ingredients together real well. Except for whole pimentos Then pour in a bowl, add to it all the dry spices, using a small spoon mix well to combine all the ingredients. Wash and trim pork loin, not removing all the fat. Then rub marinade on both sides, leaving about 2 tbsp for gravy. Also add the whole pimentos all over the season pork loin .Let sit in marinade at least 2 hours, I like to do it overnight. Preheat oven to 350 bake covered with foil for 2 hours fat side up. Remove and pour off juice, saving for gravy, then bake an additional 15 minutes without foil cover just to give the top a little crust. Remove and slice as desired. Serve with rice with kidney beans and steam cabbage. Would be perfect with some mashed or bake potatoes.

GRAVY

In sauce pan, heat butter or coconut oil, when butter is melted, or oil is hot, add all purpose flour and stir continuously, till you have a rue, add juices from cooked pork, stir for about 2 minutes and bring to a boil, then add water, stir again for about 2 minutes , let cook on low about 5 minutes. Once I finished slicing the pork loin, I poured the grave all over it..
