Coconut Curry Gumbo

Yes you read that right. I have always loved to mix southern food with Jamaican. I feel the two pairs real well with each other and when my 13 year old daughter challenged me to make curry gumbo then naturally  I had to accept her challenge. Around here my children who has not yet been to Jamaica the place I’m from like to say they feel close to it when I make the food from there.However Gumbo is a staple in my house, I guess you could say it is one of the non Jamaican dishes that they love. And so one day my daughter challenged me to make curry gumbo, I could not say no. Here it is, I hope your family enjoys it as well as mine did .

PREP 30 minutes

COOK TIME 1hr 15 minutes

SERVE 6-8

INGREDIENTS

  • 2 split chicken breast
  • 1/2 of a pack of polka kebsa sausage ( cut into slices)
  • 1 lb shrimp ( peeled and deveined)

Fresh Vegetables and Herbs

  • 1/2 cup chopped red,green and yellow bell peppers each
  • 4 garlic cloves ( minced
  • 3 sprigs fresh thyme
  • 1 cup chopped carrots
  • 1/2 cup finely chopped celery
  • 1 large onion diced
  • 1 haberno 1/2 seeded and diced( would prefer scotch bonnet, but had none)

DRY INGREDIENTS

  • 1 tbsp black pepper
  • 1 tbsp creole seasonings
  • 1 tsp turmeric powder
  • 1 tbsp garlic powder
  • 1 tsp cayenne pepper
  • 2 tsp black pepper ( divided 1 and 1)
  • 1 tsp grated nutmeg
  • 1/2 tbsp all spice
  • 1 tbsp old bay seasoning
  • 2 tbsp curry powder
  • 1 tsp paprika
  • 3 tbsp all purpose flour
  • 1 1/2 tsp salt (divided 1 and 1/2)
  • 2 cups low sodium chicken broth
  • 2 cups water
  • 1 1/2 cups coconut milk

OTHER INGREDIENTS

  • 2 TBSP COCONUT OIL
  • 2 tbsp butter

DIRECTIONS:

Preheat oven to 350

wash chicken breast with white vinegar and water. season with salt n pepper. Bake for 30 minutes, let chicken cool and shred. I save the bones and use them then discard them after gumbo is done.

On medium high heat  , heat coconut oil, brown sausage on each sides, then set aside on a plate, in same pot add butter let melt then add minced garlic and chopped onions, saute until soft about 3 minutes, then add bell peppers stir to combine real well, cook for about 3 minutes add carrots and celery stir and combine real well, cook for about 5 minutes add flour and stir continuously for 8 minutes until Add the brown sausage back in ,stir to combine, then add water, and chicken broth, add dry seasonings and fresh thyme, cover and bring to a slow simmer about 10 minutes. Add shredded chicken and shrimp, stir cover and cook another 8 minutes or so until shrimp is cooked.
