Whole Snapper Recipe

 

This was our Easter Sunday dinner, It is a tradition in Jamaica that during lent we do not eat meat, fish is the only acceptable thing. My children usually look forward to that time of year, for the escovitch and brown stew snapper. Those recipes are coming soon, this Easter Sunday  I changed things up  a bit with the marinade I created for the fish as well as frying and then making a sweet and spicy type gravy.

INGREDIENTS for MARINADE

  • 1/2 inch piece of fresh ginger
  • 3 green onions (scallions)
  • 1 scotch bonnet pepper, can also use habernoz9 leave or remove seeds depending on families ability for the heat.
  • 4 sprigs fresh thyme
  • 4 cloves of garlic
  • 2 tbsp all spice
  • 1 tbsp salt
  • 1tbsp black pepper
  • 2 tbsp low sodium soy sauce
  • 1 tbsp brown sugar
  • juice of 1 lemon
  • in a blender or magic bullet pulse together , till green onions, thyme and ginger is liquefied.

Directions:

You butcher should have already cleaned fish by removing scales, tails , fins and guts, but you want to make sure it is fully cleaned. In fill a large bowl with water, add 4 tbsp kosher salt and let fish sit in it for about 2 minutes, drained and wash again. Cut a slice down both sides of each fish, then again across two times, this will helps the marinade to really penetrate the fish. Pour marinade over fish being sure that every fish has some on both sides, cover in a good seal container and marinade overnight.

INGREDIENTS FOR FRYING

  • 2  cups all purpose flour
  • 1 tsp salt
  • 2 tsp black pepper
  • 2 tsp garlic powder
  • 2 tsp paprika
  • 2 cups vegetable or coconut oil

In a large bowl combine flour with dry ingredients.

Heat oil , making sure oil is hot,because fish will fall apart ( about 350)

Flour fish and fry each one, on both sides, being careful that the first side is really done before flipping as this will cause the fish to fall apart.

INGREDIENTS FOR SWEET AND SPICY GRAVY

  • 1/2 stick of butter
  • 1  tbsp coconut oil
  • 2 tbsps brown sugar
  • 1 onion diced
  • 1/2 of a red and yellow bell pepper thinly sliced( any color you have on hand is fine)
  • 2 roma tomatoes diced
  • 1 tbsp soy sauce
  • 1 tsp Worcestershire sauce
  • 1 1/2 cups water
  • 2 garlic cloves minced
  • 3 tbsp all purpose flour
  • 1tbsp hot sauce
  • 1/2 tsp nutmeg
  • 1 tbsp black pepper

DIRECTIONS

On medium heat, heat oil and melt butter, add garlic and onions saute till soft about 3 minutes, tomatoes and bell peppers, stir to combine and let saute about 2 minutes, add sugar stir till sugar is cooked out add flour and stir about 5 minutes till flour is cooked out, nutmeg, black pepper add soy sauce, Worcestershire sauce, hot sauce and water, cover and bring to a slows simmer for about 8 minutes.

Served with rice and kidney beans and steam cabbage.
