BEEF STEW JAMAICAN STYLE

 

INGTREDIENTS

  • 3LBS BEEF ( CUBED FOR STEW
  • 1/2 tbsp kosher salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp paprika

VEGETABLES

  • 4 medium size carrots peeled and sliced ( to your liking)
  • 5 redskin potatoes ( washed and diced)
  • 3 sprigs fresh thyme
  • 1 large onion  diced
  • 2 tbsp minced garlic
  • 2 grape vine tomatoes, (diced)
  • 3 cups beef broth ( unsalted)

OTHER INGREDENTS

  • 1 cup all purpose flour
  • 1/8 cup olive oil
  • 1/2 stick of butter
  • 1 tbsp Grace Browning ( or you can use Worcestershire sauce

 

DIRECTIONS

Wash meat in water add 1tbsp of kosher salt to water

Dry meat with paper towels or a clean kitchen towel.

Season meat with dry ingredients, cover and marinade an hour at least.

Flour pieces of meat ( I just poured the flour over the meat and coat best as possible

Heat olive oil on medium heat, add butter and let melt, then add chopped onions and minced garlic sate about 2 minutes. Add all the meat and stir continuously for about 8 minute, then add the browning or soy sauce and stir about a minute. Add 1 1/2 cups of broth cover and cook for 1 hour. The add potatoes and carrots, remaining beef broth, cover and simmer another 1 hour. Serve with white rice.

Stew beef is awesome for prepping ahead, you can season the beef and seal in a proper container for a few days, even a zip loc bag . The potatoes and carrots, onions, garlic you can do the same with to save time.

 

Note: to cook in a slow cooker, you season meat with dry seasonings, coat with flour. In slow cooker add oil, meat, then browning or soy sauce,  butter, all the vegetables, including onions, tomatoes, garlic, thyme, potatoes and carrots. Add beef broth and cook on high 5 hours, or low 7-8 hours
