Simple Weeknight Dinner , Jerk chicken Tacos.
This can also be a fun Friday Dinner, it is fun because you can get the children involved. That is always a good idea.
- 6 boneless skinless chicken breast
- 1/2 cup jerk marinade
INGREDIENTS FOR JERK MARINADE
- small bunch of green thyme
- 5 green onions
- 4 cloves of garlic
- 1 scotch bonnet pepper( or hot pepper of choice) seeded or not
- 1/2 cup low sodium soy sauce
- 1/4 cup brown sugar( I love coconut palm sugar)
- 1 tbsp kosher salt
- 1/2 tsp ground nutmeg
- 1 tsp cinnamon powder
- 2 tbsp all spice
- 2 tbsp black pepper
- 1 tbsp garlic powder
- a small pinch of fresh ginger
Add all the above ingredients in a blender, magic bullet or nutri bullet and pulse real well, till you have desired consistency.
Wash chicken breast in water, with distilled white vinegar or water and lemon juice. Trim excess fat. Wrap chicken breast and pound the thicker part of the breast to flatten it a bit, this will make sure that part is cooked through. Season chicken with marinade, cover and refrigerate at least 2 hours.
Preheat indoor grill to 400 , grill each chicken pieces on each side until cook through. About
7 to 8 minutes on each side. Let cool then slice in desired size.

I also had coleslaw, so some us uses cole slaw only, while others uses salsa only , or since we all had more than one, we changed up. Sometimes even using both at the same time, This was really a fun and delicious meal.
