SIMPLE CREAMY CHICKEN AND PASTA WITH SUNDRIED TOMATOES
I love these simple, quick and delicious dinners especially on a day like today, when we finally got some rain here in Florida. And I do not know if you are like me, but the rain just always puts me in a somber relaxed mood. I just want to curl up with a good book, or Hall Mark Channel. I did take chicken breast of the fridge not knowing what I was going to make, did not do my meal plan the weekend so I knew it was going to be an easy weeknights of dinners.
Anyway once it started raining, I was geesh do I have to, my 16 and 18 year old had already left for their night jobs so I could not ask them. I was home with my thirteen year old and she was finishing up some work for home schooling Therefore it was up to me , I know my two
- 3 boneless skinless chicken breast
- 1 box uncooked penne pasta
- 1 jar sundried tomatoes in juice ( drain juice before using. )
- 1 medium onion diced
- 3 garlic cloves minced
- Salt n pepper to taste
- 1 1/2 cups whole milk
- 1 cup low sodium chicken broth
- 3 cups shredded mozzarella cheese
- 1 ½ cup shredded kraft cheese
- 2 tbsp olive oil
- ½ stick of butter
- 1/8 cup of all purpose flour
Clean chicken by removing excess fat, wash chicken in water with white distilled vinegar. Cut chicken into bite size pieces..
Preheat oven to 350
Dry chicken with paper towel, season with salt and pepper, In a pan heat oil, in the meantime bring water to a boil for pasta. Add Salt to the water and cook pasta for 5 minutes, drain and let sit. Brown chicken pieces on each side, set aside on a plate, In the same pan, add butter, let melts, then add garlic and onions, sauté till soften about 2-3 minutes, pieces , add flour and continue to stir until flour is cooked out, about 3-4 minutes. minutes, add the milk , chicken broth and stir, bring to a small boil, then add the brown chicken pieces, and the sundried tomatoes, stir in then add 2 cups of mozzarella cheese, stir until cheese is all melted, add the pasta in , pour into a baking dish and bake for 15 minutes at 350..
Note: you can use bacon instead of sundried tomatoes, I am just very excited my kids love it, so a lot of times in pasta dishes I’d use it instead of bacon, because the frist I did they were like this tastes almost like bacon. Also another note you can use heavy cream instead of regular milk and if you do, you do not need the flour to thicken. I prefer when a recipe call for heavy cream if I can avoid it I do. I also love to add a cup of defrosted frozen spinach, my 13 year old how ever not a fan of spinach, so I left it out this time.
