Jerk Chicken breast with Seasoned pumpkin Rice

JERK CHICKEN BREASTS

INGREDIENTS

  • 4 chicken breasts, butterfly and separated (cut into half) I actually bought it that way from BJs .
  • ½ homemade jerk marinade

 

INGREDIENTS AND DIRECTION FOR JERK MARINADE

LIQUIDS

  • 1/3 cup soy sauce ( low sodium)
  • 2 tbsp apple cider vinegar
  • 1 tbsp coconut oil, or oil of choice

VEGETABLES

  • 1 tsp chopped fresh ginger
  • 3 green onions
  • 4 sprigs fresh thyme
  • 4 cloves of garlic
  • 1 hot pepper of choice( seeds in or out depending )

DRY INGREDIENTS

  • 3 tbsp brown sugar
  • 1 tsp kosher salt
  • 2 tbsp all spice
  • 1 tbsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp red pepper flakes ( if no hot pepper
  • 1 tbsp ground nutmeg
  • 1 tsp ground cinnamon

ADDITIONAL  INGREDIETNS

  • 1/2 cup distilled white vinegar

DIRECTIONS

In a blender or magic bullet add liquids, and vegetables , pulse till you have a marinade like consistency, Then add all the dry ingredients and pulse an additional minute. Fill a large bowl with water and add distilled vinegar, let chicken sit in that about 25 minutes, then trim excess fat from chicken, pour marinade over chicken rub into both sides real well, cover and refrigerate at least 2 hours, the longer the better. Please save the marinade left behind for gravy 

Heat indoor grill on 400, spray with cooking spray, grill chicken breasts on each side, till cook through , set aside on a plate. Let chicken cool then sliced( slicing is optional)

 

 

HOMEMADE SEASONED PUMPKIN RICE

INGREDIENTS

  • 2 cups, chopped fresh pumpkin peeled and diced into small pieces( can use frozen pumpkin
  • 1 small onion diced
  • 2 green onion sliced into 3 each
  • 3 sprigs fresh thyme
  • 3 garlic cloves minced
  • 1 (2.12oz) chicken flavored soup mix ( optional) you can substitute with 1 large chicken bouillon cube or 2 tsp chicken bouillon powder
  • 2 cups uncooked Jasmine white rice.
  • 7 cups water
  • ¼ stick of butter

 

 

 

 

 

 

 

DIRECTIONS

To 6 cups of water, add pumpkin and cook for about 1 hour until pumpkin is soft, Use the back of a spoon and press pumpkin pieces to pot and mashed( this is how I did it, you can mash it how you see fit  and mashing is optional. ) Add another 1 cup of water , add thyme, green onions, minced garlic and butter, cover and cook for about 15 minutes. Add wash rice, cover and cook on medium low about 25 minutes.

For this meal the gravy is optional, but I will add it anyways
