SHRIMP STIR FRY

INGREDIENTS

  • 2 lbs shrimp ( peeled and deveined)

Vegetables

  • 3 medium carrots ( peeled and chopped)
  • 2 cups broccoli florets
  • 1 lb green beans ( washed and broken in 2 each )
  • ½ of a yellow, red, and green bell pepper sliced
  • 1 medium onion sliced
  • 2 cloves of garlic minced

Spices

  • 1 tsp salt
  • 2 tsp black pepper
  • 1 tsp garlic powder
  • 2 tsp old bay seasoning

Oils and Liquids

  • 3 tbsp olive oil ( divided 2 n 1)
  • 2 cups water
  • ¼ cup soy sauce ( low sodium)
  • 1/8 cup Worcester sauce
  • 2 tbsp apple cidar vinegar
  • 2 tbsp butter

Other Ingredients

  • 1 tsp fresh minced ginger
  • ½ cup brown sugar
  • 1/8 cup cornstarch
  • 2 tbsp lemon juice

Directions

Be sure all of your shrimp is peeled and deveined, leaving the tail on or off is optional. In a large bowl covered shrimp in water add lemon juice and sit for at least 1 minute. In the mean time in a large bowl, add water, soy sauce, Worcestershire sauce, sugar, apple cidar viegar and cornstarch using a whisk or a fork, mix real well, till the cornstarch is all dissolved.    Remove and dry shrimp, season with all the spices. In a medium sauce pan that has a lid heat 2 tbsp olive oil on medium heat, brown shrimp on each side about a minute on each side.   Set brown shrimp aside on a plate, in the same pot, not cleaning it leaving it the same, add the other 1 tbsp olive oil, and butter, when butter melts, add the minced garlic, and onions, sauté till soft, about 2-3 minutes, then add bell peppers, and sauté about another 2 minutes . Then add liquid mixture, stirring constantly, bring to a slow boil, then add the brown shrimp, the carrots and cover and cook about 8 minutes, then add green beans, stir and combine , turn off the heat and then add broccoli florets, combine real well. The heat should cook the broccoli nice and crisp.
