INGREDIENTS

  • 1 ½ lb boneless skinless chicken thighs ( cut in bite size pieces)
  • 1 lb shrimp ( peeled and deveined)
  • ½ of  polka keba  sausage ( cut into desired sizes)
  • ½ of an andouille sausage ( cut into desired sizes)
  • 2 stalks celery ( diced)
  • 1 medium onion ( diced)
  • 1 cup green, yellow pepper ( diced)
  • 1 (14.5 oz) can diced roasted tomatoes
  • 2 tsp minced garlic
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 1 tsp old bay seasoning
  • ½ tsp salt
  • 2 tsp Creole seasoning ( divided 1n)
  • 3 tbsp olive oil (2 n1)
  • 2 tbsp butter
  • 3 cups uncooked Jasmine rice
  • 2 cups chicken broth ( low sodium )

 

 

 

DIRECTIONS

Wash chicken in vinegar and water, remove excess fat, before cutting into bit size pieces. Season chicken with black pepper, salt and cayenne pepper in a separate bowl wash shrimp with water and lemon juice, let it soak about 30 seconds  to a minute,  washing our poultry, fish and beef before cooking is a Jamaican thing, we do not cook anything without washing it first. When I wash the cooking channels and see how they remove meats from the packages and just get to cooking without washing I am stunned. So it is up to you. Season the shrimp with 1 tsp Creole seasoning and 1 tsp old bay seasoning. Ina pot with lid, heat oil 2 tbsp oil and brown chicken on each side, set aside on a plate, then add remaining 1 tbsp oil and brown sausages on each side, set aside on a plate also. To the same pot,  add butter and let melts, Then add minced garlic and diced onions to the same pot, sauté about 2 minutes, add bell peppers and stir to combine, sauté about 1 minute, then add can of roasted tomatoes, and stir to combine bring to a low simmer, add  chicken broth , add celery , brown chicken and sausage, stir to combine all ingredients real well, cover and let cook low for about  10 minutes to get all the ingredients to mix well. Add rice and stir with a wooden spoon to stir all ingredients together, stir from the bottom of the pot to prevent rice from sticking, cover and cook for about 25 minutes till rice is cook.
