Do not let the long ingredients list fool you on this dish, it really is quite simple and so worth it. Really this is great for meal prep. If you prep this ahead of time, it will be a breeze. Season the shrimp and store in a zip lock bag, or an airtight storage container, mix the ingredients for the sauce and store in a mason jar (preferably)
- lbs uncooked shrimp (peeled and deveined)
- Juice of / lemon
- 2 tbsp n1 tsp salt
- 1/2 tsp salt
- tsp black pepper
- 1/4 tsp ground nutmeg
- 1/4 tsp cinnamon powder
- 1 tsp allspice ( divided 1/2 n 1/2)
- 1/2 tsp garlic powder
- 1/2 tsp old bay seasoning
- 1/4 tsp all purpose seasoning
- 1 tsp cayenne pepper
- 2 tbsp olive oil
- 1/3 cup soy sauce
- 1 tsp fresh minced ginger
- 3 tbsp olive oil ( divided 2n1)
- 2 tbsp butter
- 2 tsp apple cider vinegar
- 1 1/2 tbsp corn starch
- 2 tbsp Worcestershire sauce
- 1 tbsp hot sauce ( I used scotch bonnet the flavour is perfect for jerk)
- 2 cups water
- 1/2 ketchup
- 1 med onion diced
- 1 cup chopped bell peppers, red, green and yellow
- 1 tsp minced garlic
- 2 sprigs fresh thyme ( chopped finely)
Directions. In a large bowl soak shrimp covered in water and lemon juice for 30 minutes. Dry shrimp with a paper towel or clean kitchen cloth.In bowl season shrimp with all the dry seasonings leaving 1/2 tsp of allspice, leaving cinnamon powder and nutmeg, Also using 1 tsp brown sugar, setting aside the remainder for the sauce. In a large saute pan with lid, heat 2 tbsp olive oil, brown shrimp on each side about 1 minute per side, when done, set shrimp aside on a plate. In the meantime in a large bowl, add soy sauce, Worcestershire sauce, remaining brown sugar, cinnamon powder, nutmeg allspice, hot sauce, ketchup, and cornstarch, use a whisk and mix ingredients well. in the same pan not cleaning it, add the remaining 1 tbsp olive oil and 2 tbsp butter, when butter melts add minced garlic and onions saute till cook about 2-3 minutes. Then add diced bell peppers, minced thyme and saute another 2 minutes, Pour liquid mixture from the bowl in and stir continuously, bring to a low boil, then add shrimp, turn off heat, stir and combine shrimp in sauce.
Serve with white rice I also did some black beans on the side.
Note: If you have an indoor grill, you can also grill shrimp instead of browning in the pan.
So you would only need 1 tbsp olive oil, for the sauce.
