Creamy Tomato Garlic Chickenw/ Spinach and Linguini

Although you love and enjoy cooking for your family, sometimes you need it to be a little easy. So although my daughters would love for me to cook them nothing but Jamaican food, that is not always going to happen. So becauseI has other things to do than just cooking for my family. I have been working on some simple yet delicious home cook meals for their family. Also because I get a lot of request for them from other moms who  also  have other things to do than just cooking for their family.



  •  4 boneless skinless chicken breast
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1 (14.05 oz ) can of fire roasted tomatoes
  • 2 handfuls baby spinach
  • 2 1/2 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 1/2  cups chicken broth ( low sodium)
  • 1 cup finely shredded parmesan cheese
  • 4 tbsp coconut oil ( divided 3n1) I chose coconut oil because I had just found coconut oil from Jamaica and wanted to see if it would remind me of the coconut oil my grandma use to make. And yes it did. You can use olive or canola oil
  • 1/3 cup of distilled white vinegar for cleaning chicken
  • 1 pack uncook linguini pasta


Put the chicken in a large bowl and cover with water, add 1/3 cup of distilled white vinegar. Let the chicken sit in vinegar water at least 30seconds to one minute. Remove and rinse, then dry each breast either with a paper towel or a clean kitchen cloth. Cut chicken into desired pieces, I butterfly the chicken first so the pieces would be thin and not thick.  Season chicken breasts pieces with dry ingredients. On medium heat, in a pot with lid heat 3 tbsp of oil, brown chicken on each side about 3 minutes on each side. Set aside on a plate

In the mean time in a pot cook pasta for 9 minutes. Drain and cool off. When chicken is done in the same pot not cleaning it add the remaining 1 tbsp of oil, then saute garlic about 1 minute, then add the flour and cook about 3 minutes stirring continuously, Then add the can of tomato, the milk and the chicken broth, bring to a slow boil about 6 minutes, then add the parmesan cheese, stir till it is all melted, then add the chicken back in, stir to combine real well. Cover and bring to a low boil, add the aldente pasta, using a tongue combine really well, cook for 5 minutes, then add the spinach turn off the heat, that is all you need for the spinach to softens.and using the tongues combine.
