Crock pot Jerk Pork Chops

 

Crockpot Smothered Jerk Chicken

To make this easier and a little less confusing and not seem so overwhelming because of all the ingredients, I am going to break this down into steps, including the ingredients.

First I start off with cleaning and seasoning the pork chops

Ingredients

  • 3 lbs center cut pork chops
  • 2 tsp seasoning salt
  • 2 tsp brown sugar
  • ½ Tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp paprika
  • ¼ Tsp nutmeg
  • ¼ Tsp cinnamon powder
  • 2 ½ tsp all spice
  • 2 tsp dry thyme
  • 1 tbsp coconut oil
  • Juice of ½ lemon for washing pork chops

In a large bowl cover the pork chops in water and squeezed the lemon juice over it, using your hand make sure the lemon juice is well circulated throughout the water. Remove any excess fat, leaving pork chops in lemon water for about a minute, in the meantime in a small bowl, and prepare the ingredients above, except for the coconut oil, mix and combine all the ingredients together really well.  Drain water from pork chops and rinse one more time with water.  Drain well, first pour the coconut oil all over pork chops and rub them well then pour all the dry ingredients all over the pork chops, using your hands( preferably with a glove on) rub, mix and combine the pork chops and the dry rub really well, making sure every piece of pork chops on both sides has some rub on them. Cover and refrigerate at least 2 hours.

In the meant time in a container, prepare the ingredients for the sauce

Ingredients for Sauce

  • 1 ½ cups of water
  • 1 tbsp apple cider vinegar
  • ¼ Tsp cinnamon powder
  • ¼ Tsp grated nutmeg
  • 1 tsp all spice
  • 1 tsp fresh grated ginger
  • 1/3 cup soy sauce ( low sodium)
  • ¼ cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp scotch bonnet pepper
  • 1 tbsp corn starch
  • ¼ brown sugar

 

In a container combine all ingredients together, using a whisk, mix real well, cover and refrigerate.

 

Additional  Ingredients

  • 1 large onion sliced
  • 3 green onions cut into 3
  • 1 tsp minced garlic
  • sprigs fresh thyme

 

Directions

Preheat indoor oven to 400, spray with cooking spray, preferably coconut oil cooking spray. Grill each pork chops on each side till you have perfect grill marks, about 4-5 minutes on each side. In the bottom of slow cooker add ½ of the sliced onions,  minced garlic, 2 of the fresh sprigs of thyme, then layer pork chops on top, when all the pork chops are in, add the remaining sliced onions, remaining fresh thyme and the green onions. Then pour the liquid over it cover and seal, cook on high for 5 -6 hours, or on low 7-8 hours.
