if you know anything about Jamaican food, then you know about those sweet and delicious festivals. I love those, my children those and my husband loves them. So one day my 13 years old and I was playing around in the kitchen, attempting to change up some old fashion Jamaican recipes and make them our own, well this is what we came up with for those festivals.
SWEET CORN FRITTERS
- 1 1/3 cup all purpose flour
- ¼ cup fine cornmeal
- ¼ cup whole kernel corn ( can drain, or frozen defrosted)
- 1/3 cup sugar
- 1 tsp salt
- ¼ tsp nutmeg
- 1 tbsp baking powder
- ½ tsp baking soda
- 1 cup water
- 1 1/3 cup oil fry frying ( I like coconut oil, but vegetable oil is fine)
In a large bowl add the flour, sugar, baking soda, baking powder, cinnamon and nutmeg and mix and combine really well, then add the corn and combine really well also. Using the water make a dough, the dough will be sticky, so you need a scoop like an ice cream scoop to put it in the pot for frying.
Heat oil in pan and scoop desired sized and fry about 3-4 minutes on each side.
They are a perfect side dish, also can be served as appetizers.
