Rosemary Garlic Butter Smashed Potatoes
• 2lbs Yukon gold potatoes
• ½ stick of butter
• 2 tbsp olive oil
• 2 tsp minced garlic
• 1 sprigs rosemary ( remove the leaves and minced)
Pinch of salt and pepper
Preheat oven to 400
Wash potatoes and let dry, you can sit them on a clean kitchen towel or on a large piece of paper towel and let sit, or you can simply dry them yourself. Place potatoes in a large bowl cover with plastic wrap ( saran wrap) Cook in microwave for 20 minutes. In the mean time in a small sauce pan, heat olive oil and melt butter, add minced garlic and minced rosemary, turn the heat off after about 2 minutes. When the 20 minutes up on the microwave, place potatoes in baking dish, using a potato masher or like I use a very sturdy metal spatula, I use the back of it. Press on each potato and smash them a bit, be careful you do not want to make mashed potatoes, instead just get them cracked. Pour the olive oil and butter mixture all over each potato. Bake for 20 minutes uncovered.
