Cheesy Chicken and Spinach Manicotti

Cheesy Chicken and Spinach stuffed Manicotti

Ingredients

• 1 box uncooked manicotti pasta

• 3 regular size chicken breast ( boneless and skinless)

• 2 large handfuls of leafy green spinach

• 1 garlic clove minced

• 1 small onion finely chopped

• 1/8 cup plain Greek yogurt ( light)

• 1 cup and 1tbsp heavy cream

• 1 cup and 1tbsp of half and half

• Salt n pepper to taste

• 1 tbsp olive oil

• 1 1/2 cup mozzarella cheese ( or cheese of choice

• 1 1/2cup shredded parmesan cheese

• 2 tsbp butter

Directions

Preheat oven to 350

Wash and clean chicken breast , season with salt and pepper, pour olive oil over chicken , massage the salt ,pepper and olive oil into chicken, bake for 25 minutes, In the meantime using instructions on pasta box, cook pasta with about 5 minutes leaving. Drain and wash pasta with cold water to stop from cooking, Shred or chopped chicken to small bite size pieces, wash and chopped spinach, In a large bowl add spinach, chicken, minced garlic, chopped onions,1/2 cup of the mozzarella cheese, 1/2 cup of the parmesan cheese 1 tbsp half and half, 1 tbsp heavy cream and the Greek yogurt and using a spoon combine all ingredients real well. Spray baking dish with cooking spray. And add ½ cup of mozzarella cheese as well as ½ cup of parmesan cheese to the bottom of baking pan. Fill each pasta up with chicken, cheese and spinach mixture. ( I used a zip loc bag and cut a small hole in a corner and squirt from there. Place each stuffed manicotti in the baking dish, when done sprinkle remaining cheese on the top, pour half and half and heavy cream on the top as well. Bake on 350 covered for 30 minutes then remove cover and bake another 15 minutes.
