This side dish is extremely universal, in that it can be served with many different proteins, also can be sized up or down.
  • Ingredients
  • • 4-6 small Yukon gold potatoes ( scrub and diced in desired pieces)
  • • 2 medium size regular sweet potatoes ( peeled and diced in desired sizes)
  • • 2 white sweet potatoes ( the ones that are white when you peeled them and not the original orange ones)
  • • ½ reg green, yellow, and red bell peppers ( chopped in big chops)
  • • Salt n pepper to taste
  • • 1 tsp roasted garlic powder ( regular garlic powder is fine)
  • • 1 tsp cayenne pepper
  • • 2 tbsp olive oil
  • • ½ stick of butter ( melted
  • • 1 tsp fresh minced garlic clove
  • • 1 healthy sprig of fresh rosemary( remove the leaves and minced
  • Note: Add the minced garlic and minced rosemary to the melted butter, combine and let sit till potatoes are done.

  2. Preheat oven to 400
  3. Layer a flat baking pan with foil paper, pour 1 tbsp olive oil and spread, add the potatoes and bell peppers, season with salt, pepper, garlic powder and cayenne pepper, add the other 1 tbsp olive oil. rub and coat potatoes and peppers really well, Cover with foil and bake 1 hour.
  4. Note: Can be served with poultry ( cooked in many different ways) Can eb served with fish and beef as well
