Authentic Jamaican Brown Stew Chicken

This is one of the many favourite dishes of my country Jamaica and one that is always requested by others
Ingredients
  • • 1 whole chicken ( about 5lbs)
  • • 2 medium onions ( 1 diced and 1 sliced)
  • • 1 sprig rosemary
  • • 2 sprigs fresh thyme
  • • Pinch of salt
  • • 2 tsp black pepper
  • • 2 tsp garlic powder
  • • 2 tsp adobe all purpose seasoning
  • • 2 tsp Lawry’s seasoning salt
  • • 1 tsp old bay seasoning
  • • 1 tsp all spice
  • • 2 tsp Jamaican browning, ( can be substituted with kitchen bouquet)
  • • 2 tbsp brown sugar
  • • ⅓ cup oil
  • • 1 ½ cups red, yellow and green bell pepper ( use any color you have)
  • • 3 cups of carrots
  • • 2 tbsp hot sauce ( I used scotch bonnet)
  • • 1 cup chicken broth
  • • ½ cup water

Instructions

  2. Cut chicken into pieces, remove skin. (this is optional). Wash chicken with water and distilled vinegar. Season chicken with all the dry seasonings, the rosemary, thyme, minced onions ( save the sliced onions for later) and browning. Cover and refrigerate at least 2 hours (more if possible). In a heavy pot with lid, heat oil on high, brown chicken pieces, just to give them a nice brown color, you do not want to fry them dark. Being, sure that you remove whatever onion, thyme and rosemary pieces. When each batch is done, you can put them back in the same bowl you have the seasoned chicken, so not to dirty anymore dish. When you are done, add the sliced onions and sauté for about 2 minutes, then add the brown sugar stir till dissolved about 3 minutes, then the diced bell peppers, ketchup, hot sauce, and carrots, stir to combine really well. Add the chicken pieces back in the pot add 1 cup chicken broth and stir, cover and cook on medium heat for 30 minutes, stirring occasionally, then add ½ cup of water and cook for an additional 15 minutes.
  3. Serve with rice or baked potatoes
